How To Make Vegan Omelette – Spanish omelette

The Vegan Omelette (Like the Spanish omelette that is one of the traditional dishes in the Spanish cuisine) .

This recipe for Spanish omelette, the most commonly served dish in Spain. Also called Spanish tortilla, One of the greatest omelettes in the world.

Vegan Omelette - Spanish omelette

Ingredients

4 potatoes (1kg)

1 scallion / 1 scallion ( this )

250 ml of Yolanda flour (the one I use) or chickpea flour (use a meter, fill the measure of liquids with flour up to the 250 ml signal)

Salt

Water

Sunflower oil

1 teaspoon chopped parsley

1/3 teaspoon of turmeric

Vegan Omelette Recipe :

Fry 4 potatoes (1 kg) and 1 diced onion with salt to taste in olive oil.

Cut 4 potatoes (1kg) and 1 scallion into cubes.

Fry in sunflower oil with salt to taste.

Beat 250 ml of Yolanda flour or chickpeas, 1 teaspoon of chopped parsley, 1/3 teaspoon of turmeric and 1 teaspoon of salt with water, until you get a consistency similar to that of beaten eggs (it has to be a little thicker )

Blend 250 ml gram flour (or Yolanda flour), 1 teaspoon salt, 1 teaspoon chopped parsley, 1/3 teaspoon turmeric and water until it is the consistency of beaten eggs (a little denser than beaten eggs) .

Add the potatoes and scallions and put the dough in a pan at medium temperature with a little sunflower oil.
