Vegan Lemon & Lime ‘Cheececake’

Ingredients

  • Crust:
  •  2 cups dry, shredded, unsweetened coconut

  •  Juice of 1 lemon

  •  Zest of 1 lemon

  •  1/4 tsp real salt

  •  2 tbsp chia seeds

  •  1/2 cup water

  •  8 medjool dates

  • Filling:
  • 1 cup raw cashews

  • Juice of 6 limes (~3/4 cup lime juice)

  • Zest of 2 limes

  • 2 large avocados

  • 1/2 cup coconut oil, melted

  • 3/4 cup grade B maple syrup

  • 1/2 tsp real salt

  • 1 tsp pure vanilla extract

How To Cook

  • Crust: 
  • In a food processor, mix all ingredients then press into a 9 inch pie pan or spring form pan and set aside.
  • Filling:
  • Pulse the cashews until finely ground
  • Add the rest of the ingredients and process until everything is smooth and creamy
  • Pour on top of the crust and place in fridge overnight for at least 8 hours
