Vanilla extract – 1 table spoon
Unsweetened coconut in the shredded form – 1 cup
Not-too-sweet chocolate chips – 1 cup

How to cook the vegan oatmeal cookies:

1- Make your oven ready by preheating it to 375 degrees.

2- Mix well the dry ingredients that include flour, salt, quick oats and baking soda.

3-The vegan spread needs to creamed well with sugar till it turns out into a fluffy mass.

4- Add lemon juice, vanilla, soy milk and beat well.

5- Now pour the dry ingredients in this creamy mixture to give it firmness.

6- Stir well with shredded coconut and chocolate chips.

7- Make use of an ice cream scoop to put small servings of this dough on an ungreased cookie sheet.
