My friend got a bottle of vintage port for Christmas last year, and he offered me some of it.

To celebrate this special occasion, I decided to create something sweet, that underlines the flavors of the wine.

Since I had some mulled wine from the day before (red wine with cinnamon, cloves, oranges and star anise), my creation became red wine cake with dark chocolate.

I also used the mulled wine for the icing, which added a super dreamy and wintry look to the cake.

It was really delicious! Along with the port it tasted like instant happiness (even though my friend ate the rest of the cake for breakfast).

If you don´t have any mulled wine, just take any red wine you like!

Ingredients

  • half cup of red wine or mulled wine
  • half cup of neutral oil
  • one cup of sugar
  • 1,5 cups of flour
  • half cup of corn starch
  • one tablespoon of baking powder
  • pinch of salt
  • half cup of unsweetened cocoa
  • 50 g of dark chocolate
  • For the icing: one cup of confectioners sugar
  • one tablespoon of mulled wine

How to cook red wine cake

Mix mulled wine, sugar and oil with a spoon.

Add flour, corn starch, baking powder, cocoa and salt. Keep stirring.

Chop the chocolate into small pieces. Mix the batter with the chocolate and pour everything in a pan.

Preheat your oven to 180 degrees Celsius/350 degrees Fahrenheit and bake the cake for around 25 minutes.

Take it out of the oven and let it chill.

Mix confectioners sugar and wine with a fork.

If necessary add more wine.

The texture is supposed to resemble toothpaste.

Pour the icing over the cake and if you like, grate some fresh orange zest over the cake.
